Seeing how we are currently playing an all dwarf campaign in the kingdom of Munzil-Galazar aka Mannis Mountain I thought I would slowly add some info here as I think of it. This is my own creation based upon several published works ranging from Tolkien to TSR (The Complete Dwarves Handbook) to google searches for "how do the dwarven underground civilizations tell time or do they not care?"
If you have a specific question or need more detail about something feel free to ask and I will research it or make something up so we have a foundation with which to work.

Munzil-Galazar gets it's meat and dairy from mountain goat farms.
Cool Season Vegetables are Easiest and Most Productive
Mountain gardens excel (and perhaps do even better than lower elevation gardens) with cool season vegetables. Below are vegetables recommended for the mountains:
Leafy greens: lettuces, arugula, kale, spinach, Swiss chard, mâche, collards, cabbage, endive, radicchio, turnip greens, beet greens, garden cress; Root vegetables: carrots, beets, radishes, turnips, kohlrabi, rutabaga, potatoes, leeks; Other vegetables: peas, broccoli, cauliflower, Brussels sprouts; Herbs: reliably hardy perennial herbs include French tarragon, horseradish, some mints, and chives. Perennial herbs that are not reliably hardy (such as sage, thyme, oregano, rosemary, bay laurel) can be grown in pots and brought in for the winter. Annual herbs that can be direct-seeded in beds include parsley, dill, calendula, and borage. Basil and cilantro are annual herbs that are heat lovers and need a lot of GDUs to develop. Consider growing them in a pot in a warm, sunny location and putting them inside at night or covering them.
This would make the need for storing food for the winter something that the dwarves would do just as any other medieval population.
Food specific to Munzil-Galazar would be the delicacies of lizard meat, blind cave fish caught in underground streams or lakes, and the hybridization of mushrooms.
Beer, wine, and spirits would be made just as any other place. Fresh water and goat's milk would be available as well.
